The calçots are a variety of green onion, very popular in Catalonia. Calçotada is the name given to the roasting of these greens on a barbecue in the countryside, usually from November to April (when the calçots are the best!), and it is an institution in Catalonia : the occasion for the family or friends to gather around a good meal, with of course good wine!
